Sopwell Scones
The secret recipe to our warm homemade scones.
Makes 10 scones with 5cm diameter cutter
Ingredients
250g plain flour
50g sugar
15g baking powder
50g cold butter (from the fridge)
2 whole eggs
45g low fat yoghurt (you can mix half plain yoghurt and buttermilk)
Pinch of salt
Method
- Sieve the flour, baking powder, set aside
- Cut the butter in to small cubes, set aside
- In a mixing bowl, add the flour, sugar, baking powder, salt and butter
- Mix it to a crumble
- Add eggs and low fat yoghurt
- Mix it well until a smooth dough forms and transfer on to a hard surface
- Cover with a damp cloth and let it rest for 15 to 20 minutes
- Roll the dough with a rolling pin, dusting flour while rolling to avoid it sticking on to the surface, the thickness of the dough should be around 6 cm thick
- Begin to cut with a 5 cm round cutter and place on a baking tray
- Coat with egg yolk and bake at 150°c for 17 minutes
- Leave to cool before serving warm with clotted cream and strawberry jam
