Now The Restaurant has been open for over a week we thought we would sit down with Restaurant Chef Joe Graham to find out what inspired the delicious new menu…
Which dishes are the most summery on the menu and why?
” For me, what epitomises the English summer is the Tomato and Burrata starter dish as it uses the best of heritage English tomatoes. To follow, the Wild Bass main with Goat’s cheese gnocchi is a lovely summer dish as we always try to source the best English produce. English peas also help give the dish its summer taste and adds a fantastic fresh flavour!”
What made you decide to create these dishes? What inspired you?
“The summer time, this amazing time of year is the only inspiration you need, the garden comes alive! Here in the UK we have some amazing local produce coming from our farmers and the produce is enough to inspire a Chef to be creative and have some fun with great flavours!”
Which is your favourite dish on the menu to make and why?
“My favourite dish would be the Spiced Duck Breast starter, it’s a very interesting flavourful dish that’s probably a little different to what some people would expect but again we use great English raspberries in various ways that bring a different depth to the dish and complement the duck extremely well.”
What summer ingredient do people often forget about that you advise people cook more with in summer?
“It’s the best time for berries, tomatoes and green vegetables, locally grown, they pack a whole punch of flavour! I would encourage people to get down to their local farmers market and take a look for yourself. There’s a whole lot of amazing produce out there at this time of year and I would recommend supporting your local businesses and taking advantage of the fruits of their labour, it will be more than worth it.”
