BBQ Season is here
BBQ season is here, and everyone is searching for the perfect way to impress family & friends. Here are a few top tips to keep in mind as you prepare for your BBQ’s.
Choosing good quality meat
Some of the best meats include sirloin steak, rib eye and even pork chops. Always look at the colour, marbling, and fat content, the more the better, fat is flavour!
Preparing the grill
To get your grill ready, add some olive oil painting to the grates to keep them from sticking. Preheat the grill to around 250 degrees Celsius. You should be able to feel the heat quite aggressively when you hold your hand above the grates for a couple of seconds. Use a grill plate to cook the meat if the pieces are too small for your grill grate, this will still give the flavour, but your chosen meat will not fall from through the grill.
Preparing and seasoning
Dab your chosen meat with a paper towel to remove any juices that could prevent it from searing correctly on the grill. Leave the meat at room temperature as your grill heats up. Brush a tiny amount of olive oil on both sides of the meat to prevent sticking on the grill. Then, sprinkle each side with salt and pepper and if you feel fancy, you can add any of your favourite seasonings, A good starting point would be garlic, thyme, and rosemary.
Marinade – Optional
You can opt for many different marinades, especially for pork chops. It is good to remember to leave meat to marinade in the fridge for at least 2 hours, for best results overnight.

Direct and indirect heat
Direct heat – When you sear the steak – over the flame
Indirect heat – keeps the meat cooking – not over a flame
First you put the meat on direct heat and sear both sides for at least 30seconds, and then move to indirect heat until they are cooked to your desired amount. Avoid opening the lid to keep checking on. These normally cook quickly, and you’ll only need to flip them once while searing and once while cooking!
Let it rest
After you feel that your meat is cooked to perfection, give them about 10 minutes resting time at room temperature, this process will allow the juices to run back through them, providing the flavours you have been craving for. Avoid cutting into the meat until the resting period is over.
